Resveratrol Chemical and Biological Properties
Resveratrol is one of polyphenolic compounds class called stilbenes. Its molecular formula C14H12O3 has molar mass 228.24 g mol?1 with chemical name 3,4’,5- trihydroxystilbene. Resveratrol also known as 3,4′,5-Stilbenetriol; and (E)-5-(p-Hydroxystyryl)resorcinol (E)-5-(4-hydroxystyryl)benzene-1,3-diol. Resveratrol is appearance white powder with slight yellow cast, soluble in water (0.03 g/L), soluble in ethanol (50 g/L) and soluble in DMSO (16 g/L). Both trans- and cis-resveratrol configuration of this compound is soluble in fat and also can bound to a glucose molecule. trans-resveratrol appears to be well-absorbed by humans when taken orally. Laboratory experiment show Resveratrol effectively neutralizes free radicals and other oxidants and inhibits low density lipoprotein (LDL) oxidation.
Health benefits of Resveratrol
Resveratrol presence was first reported in red wine in 1992 and many speculations of its potential health benefits made Scientists interested to explore. In the journal Nature 2003, the groups of Howitz and Sinclair reported that resveratrol significantly extends the lifespan of the yeast Saccharomyces cerevisiae. Its also prolongs the lifespan of the worm Caenorhabditis elegans and the fruit fly Drosophila melanogaster as reported by Sinclair in extended studies in 2007. Other reports also show Resveratrol extend lifespan in cell culture and animal models like yeast, worms, fruit flies, fish, and mice fed a high-calorie diet.
Report from Jang in 1997 shown topical resveratrol applications inhibit the development of skin cancer in mice treated with a carcinogen and many other studies of the anti-cancer activity of resveratrol in animal models. Antihyperglycemic potential of resveratrol in experimental diabetic rats is reported in Palsamy and Subramanian published articles.
Resveratrol Sources and Availability
Resveratrol sources can be found in many fruits like grapes, wine, grape juice, peanuts, and berries of Vaccinum species, including blueberries, bilberries, and cranberries. In grapes, resveratrol is found only in the skins and depend on how long a wine fermentation time spends in contact with grape skins. This make red wines contain more resveratrol than white and rosé wines. Red or purple grape juices may also be good sources of resveratrol.
